It’s been crazy hot here in Ohio, which means we want all of the summer salads and everything light and easy. These Lemon Garlic Shrimp Skewers on the grill take less than 30 minutes to make which means it is one of the BEST summer dinners!

Healthy Grilled Shrimp

This easy grilled shrimp is considered Keto, Paleo and Whole30. It’s a great no sugar, low carb shrimp recipe that will help you keep your summer eating goals in check.

What size is colossal shrimp?

Colossal shrimp is one of the largest sizes of shrimp that you can buy in the grocery store.. That means in a one pound you’ll only get about 9 shrimp. The cooking times for this recipe are based on colossal size shrimp. If you get a smaller shrimp size, lower the cooking time.

Lemon Garlic Marinade for Shrimp

One of my favorite marinades for seafood and chicken is lemon and garlic. When you use these ingredients it is best to use fresh lemons and fresh garlic, then crush them together with other spices to allow the flavors to come through.

  • In a mortar and pestle add in salt and garlic. We like to use sea salt or pink himalayan salt. Don’t have a mortar and pestle? Find one here!garlic and herbs in bowl

  • Add in remaining ingredients except for the shrimp. Blend it together to form a marinade.fresh herbs in bowl
  • Add shrimp and garlic marinade into a bowl. Toss together and let it sit for ten minutes. You don’t want to let an acidic marinade to sit longer than 30 minutes or it might make the meat “mushy” and tenderize it too much. 10 minutes should work just fine!lemon garlic mixture on shrimp
  • After ten minutes, thread 4-5 shrimp through wooden skewers.

Can you put wooden skewers on the grill?

Yes! Soak the wooden skewers in water for at least 10 minutes or up to 30 minutes before skewering on the meat and placing them on the grill.

How to Grill Shrimp

Preheat grill to 400º Fahrenheit. When the grill is at least 400º Fahrenheit, this will help prevent the shrimp (or any other meat) from sticking to the grill.

Grill for 4-5 minutes per side or until it is pink and no longer gray.

How do you know when shrimp is done?

Colossal size shrimp will take about 4-5 minutes per side. The color should be opaque and no longer gray, but they should also feel firm to the touch.

Although you may not think to pull out an internal temperature probe thermometer, you can do that and test the temperature of the shrimp. It should read 165º Fahrenheit.

What to Serve with Lemon Garlic Shrimp Skewers

We like to serve grilled shrimp with a side salad or over a bed of rice (or even cauliflower rice). If you’re following a low carb eating plan you could serve our paleo broccoli slaw or roasted asparagus.

Ingredients
 

  • 10 ounces colossal shrimp (tails on, skin peeled)
  • 1 teaspoon salt
  • 4 cloves garlic
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • ½ tablespoon olive oil
  • 1 teaspoon chopped cilantro
  • ½ lemon (juiced)

Instructions
 

  • In a mortar and pestle add in salt and garlic.

  • Add in remaining ingredients except for the shrimp. Blend it together to form a marinade.
  • Add shrimp and garlic marinade into a bowl. Toss together and let it sit for ten minutes.
  • After ten minutes, thread 4-5 shrimp through wooden skewers.
  • Preheat grill to 400º Fahrenheit.
  • Grill for 4-5 minutes per side or until it is pink and no longer gray.
  • Serve immediately.
