With just a hint of lemon-lime, you’ll love this Grilled Lemon Lime Pepper Chicken, marinated in olive oil overnight. It’s tender and especially healthy!
Grilled Lemon Lime Pepper Chicken
Have you decided what you are serving for your picnics this week? We’re normally burger kind of people when it comes to grilling for picnics. We love our Cola Burgers and our new favorite, Chicken Ranch Burgers. Have you tried them yet?
If you’re thinking of going with something other than burgers for your holiday picnics, I’d suggest you try this Grilled Lemon-Lime Pepper Chicken. I saw this recipe on The Recipe Critic when I was looking for healthy, homemade chicken marinade. I had all of the ingredients, and it looked like it had potential. I’m not normally a huge lover of lemon-flavored things, but she said that the lemon flavor was not strong, so I decided to give it a whirl.
That was a week ago, and we’ve eaten this chicken four times since then.
Yes, it is that good.
The homemade marinade just has olive oil, garlic, onion, pepper, salt and lemon juice and lime juice. The original recipe just calls for lemon juice, but the first time I made this, I didn’t quite have enough lemon juice, so substituted half of the lemon juice with lime juice.
The second time I made it, I used straight-up lemon juice, and we liked the lemon-lime combination better, so that’s what we’re sticking with!
Simple marinade, though, right? The added benefits are that it is full of heart-healthy olive oil, and has no sugar!
You’ll love the tenderness of this chicken. The tenderness is due to the olive oil in the marinade. It is so juicy!
This is literally a chicken that I could have in the fridge all summer to eat for lunches, dinners, you name it. Serve it with a salad, or slice up the chicken and serve it on top of the salad.
Give it a try for something different this holiday weekend!
**Remember my grilling hint I’ve shared before: In order to get your meat not to stick to the grill, be sure to preheat the grill to at least 400 degrees before putting your meat on. Don’t get impatient and put it on too soon! You’ll get to eat soon enough:)

I don;t have a grill. If I were to use the oven or stove instead, what would you recommend?
Julie Clark says
If you cook it in the oven, I’d suggest 350 degrees for 30 minutes, then check the chicken to see if it needs longer or not. Stovetop would be good, too, I’d think. Just cook the chicken over medium heat until it is cooked through. Maybe 10-15 minutes depending on the thickness of the chicken.

what is the recipe for 1 person? Thanks in advance 🙂

I’d just cut the marinade recipe in half. Grill up two chicken breasts…they are great on a salad or warmed up for lunch the next day!
