We’re in the height of picnic season here, friends. What’s your favorite picnic food? One of mine is pasta salad. I love the zesty Italian flavors and fresh veggies paired with the meat and cheese. I’ve been trying to lower my carb intake and increase how much protein and veggies I eat the past year. It was my goal this summer to create an easy, healthy salad that was like my favorite pasta salad without the sugar and carbs. I’ve found it and am happy to share it with you today!

In a bowl, combine the tomatoes, onion, cucumber and olives. Cut the string cheese into bite size pieces. Add to the bowl along with the sliced pepperoni. Set aside.
In a small bowl, mix the vinegar, oil, garlic and seasoning. Pour over the salad and mix to coat.
Refrigerate the salad until serving.
