Strawberries and whipped cream: Macerated strawberries and a vanilla whipped cream make up this light and tasty no bake dessert!

Can I be honest with you? Sometimes I don’t feel like baking. Oh I love to bake, but when summer heat hits, I just don’t feel like turning on my oven.

Because I love dessert (can I get a holler here?!) I love coming up with no bake desserts like Oreo fluff, strawberry lime cheesecakes and no bake buckeye cookies. They are simple to whip up and still impressive.

Strawberries and whipped cream are one of those no bake easy dessert recipes that are pretty enough to be served at the most important occasions!

Ingredients Needed

  • Fresh strawberries. When strawberries are in season, this dessert is irresistible.
  • Granulated sugar. This is needed to macerate the strawberries. Macerating strawberries with a bit of sugar not only brings out the fruit’s lovely sweet/tart flavor, but allows it to release its delicious juices.
  • Heavy cream. You know our love of heavy cream is strong (hi there cinnamon rolls and creamy corn pasta). But heavy cream shines through when you make a simple homemade whipped cream.
  • Powdered sugar. This sweetens the whipped cream.
  • Vanilla extract. To flavor the whipped cream.

How to Make Strawberries and Whipped Cream

  • To begin, prepare the strawberries. In a bowl, add the berries and sugar. Mix until the mixture is mostly combined. Place covered in the fridge for at least 1 hour. Can I macerate strawberries overnight? Yes! The strawberries will create more juice the longer they sit.

  1. Then make the homemade whipped cream. Use an electric mixer fitted with a whisk attachment. (A hand mixer works well too.) Heavy whipping cream is whipped and stabilized with confectioners’ sugar and flavored with vanilla extract. Beat the cream until soft peaks form, then add in the powdered sugar and vanilla and beat until stiff peaks form. This is a basic homemade whipped cream that is so delicious on many desserts! Store it in the fridge until you are ready to use it.

Make a Strawberry Parfait

  • Spoon the whipped cream into a large piping bag fitted with Wilton tip 1M or 2D.
  • Add a couple of spoonfuls of macerated strawberries to a 5 ounce glass parfait cup.
  • Pipe vanilla whipped cream on top, followed by more strawberries. Then top with vanilla whipped cream.

This recipe makes about 6 parfaits, but it depends on how large your glasses or bowls are.

Can you make strawberry parfaits in advance?

I recommend making these strawberry parfaits right before serving for the prettiest presentation. Although they’ll keep ok in the fridge for a few hours, the juice from the strawberries will run and the layers may not look as pretty.

How to Serve Strawberries and Whipped Cream

Don’t feel like making a strawberry parfait? Try one of these ideas:

  • Serve over homemade waffles. Or pancakes!
  • Use Greek yogurt in the parfait along with strawberries and whipped cream for a punch of protein.
  • Serve over ice cream or vanilla frozen custard.
  • Add other fruit such as a diced peach, pineapple or bananas.
  • A drizzle of chocolate syrup will make a yummy chocolate covered strawberry treat.

  • 3-4 tablespoons granulated sugar 35-50 grams

For the vanilla whipped cream

  • 1 teaspoon vanilla extract 5 grams
  • Sliced strawberries for garnish

Instructions

Macerate the strawberries:

  • To a medium bowl, add the strawberries and sugar. Mix until the mixture is mostly combined. Set aside, covered in room temperature for at least 45 minutes.2 ½ cups sliced strawberries, 3-4 tablespoons granulated sugar

Increase the speed to high and whip until completely thickened and the mixture forms stiff peaks. ¾ cups powdered sugar, 1 teaspoon vanilla extract
  • Spoon into a large piping bag fitted with a large star or round tip and place in the refrigerator until ready to use.

To assemble:

  • Prepare six 5 ounce dessert glasses or bowls. To glass dessert glasses (or bowls) add a couple of spoonfuls of macerated strawberries.
  • Pipe vanilla whipped cream on top, followed by more strawberries. Top with vanilla whipped cream. Garnish with a strawberry.
