Pineapple Jalapeno Salsa Recipe

We’re crazy about our fresh salsa in this house. Normally we settle for our homemade Pico de Gallo recipe. I crave that stuff and eat it with just a spoon.

Last fall we got adventurous and decided to try a new fresh salsa. A sweet & spicy one. And this pineapple jalapeno salsa was born. It has a lot of the same flavors as our favorite classic pico recipe does, but instead of a base of tomatoes, it has fresh, juicy pineapple.

So how do we like to serve this bright, summery pineapple jalapeno salsa? Frankly, I could also just eat this with a spoon which equals a pretty healthy snack. In fact, if you’re plugging through a Whole30 or giving eating a Paleo diet, this naturally sweet salsa may just be the fix you need.

Ingredients
 

  • 2 cups diced fresh pineapple
  • 1/4 cup diced jalapeno pepper
  • 1 cup diced red onion
  • 1/4 cup freshly snipped cilantro
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Combine all of the salsa ingredients in a small bowl and mix well.
  • Cover and refrigerate until serving.
