I’m still behind the game a little bit when it comes to the Instant Pot. I can prepare IP hard boiled eggs and IP spaghetti like a pro, but I’ve not ventured too far from that.

I will say that Instant Pot Baked Potatoes are one of the easiest things to make. No oven, no mess. Just one of the quickest ways to bake a potato!

Although we love our perfect baked potato recipe, we’re always looking to give you options when maybe you don’t have an oven available or are maybe a little short on time. This Instant Pot Baked Potato recipe is will come to the rescue before you know it. It’s quick and easy!

What kind of potatoes are best for baking?

Have you ever wondered what potatoes are best for baking?

Russets are the clear winner. They are a starchy potato which gives them fluffy insides. When eating a baked potato the fluffy texture is much better than a waxy texture (as in red potatoes).

The skin of a Russet also helps hold up the potato to all of the delicious toppings.

How to Make Instant Pot Baked Potatoes

  • Wash and scrub each potato. Dry the potatoes.
  • Using a fork, poke each potato 3-4 times.
  • Place the trivet in the Instant Pot.

  • Pour in 1 cup of water.

  • Place the clean potatoes on the trivet.
  • Place the lid on the Instant Pot and push the valve to seal.
  • Set the IP to high pressure for 14 minutes.
  • Allow the IP to depressurize naturally for 8 minutes, then open the valve to release any pressure that may be left.
  • Once the pressure is released, open the IP and serve the potatoes. Be careful…they will be hot!

Frequently Asked Questions:

Do you have to poke potatoes for the Instant Pot?

Yes. You should always poke potatoes when you are baking them in the oven, air fryer or Instant Pot. This is so they don’t explode!

Do you have to wrap potatoes in aluminum foil?

No! We recommend not wrapping potatoes in foil when they are in the Instant Pot. It is just not necessary. The potatoes will steam beautifully without being wrapped.

Do I have to rub potatoes with oil for the Instant Pot?

The main reason to rub potatoes with oil is to make the skin crispy. The skin will NOT get crispy in an Instant Pot. Therefore, it is unnecessary to add oil. It does add a slight amount of flavor, but not enough to add the extra calories of oil. Save those for the toppings!

How many potatoes can I put in an Instant Pot?

This will really depend on how big your Instant Pot is and how big the potatoes are. We can fit about 8 Russet potatoes in our large Instant Pot. Just be sure you don’t fill it past the fill line and you should be fine.

How do you get crispy skin on baked potatoes?

So you love the Instant Pot for making baked potatoes, but you miss that crispy skin.

We get it. Here’s what you do!

Once the potatoes are done in the Instant Pot, place them on a baking sheet. Brush them with olive oil and sprinkle them with sea salt.

Broil the potatoes on high (watch them closely!) for about 4 minutes, turning them in half way in that time so that both sides get crispy.

If you love crispy skin, you’ll need to try baked potatoes in the air fryer. YUM!

  • 5 medium Russet Potatoes (about 6.5 ounces each)
  • 1 cup water

Instructions
